One of the easiest and tastiest of breakfasts …

Beautiful Squash Pancakes!

Just mix a couple eggs by hand or in a blender with baked squash.  You can use a little flour to help bind it together if you like, but it is not necessary.

For the top I sauteed kale, onions and tomatoes.

My favorite squash to use is delicata, but any kind will do!
